  1. Preheat oven to 400°F (200°C).
  2. Season steak with pepper and salt on both sides.
  3. Heat olive oil one tablespoon in a large skillet over high heat. Add steak and cook for 4-5 minutes on each side until cooked or browned to your liking. Transfer the steak to a sizzling platter.
  4. Add another tablespoon of olive oil in the same skillet, and add the sliced onions, bell peppers, and zucchini. Cook for 5-7 minutes until they are slightly softened.
  5. Add the cherry tomatoes, garlic, parsley, rosemary, and thyme, to the skillet and cook for another 3-5 minutes until the tomatoes are slightly softened.
  6. Spread the roasted vegetables around the steak on the sizzling platter.
  7. Boil diced potatoes until tender in salted water in a separate pot, then drain.
  8. Mash the potatoes with milk, butter, salt, and pepper to taste.
  9. Serve the sizzling steak with the roasted vegetables and mashed potatoes on the side.
