Ingredients:
- 2 racks of pork ribs (St. Louis style or baby back ribs)
- 2 tablespoons of brown sugar
- 1 tablespoon of smoked paprika
- 1 tablespoon of garlic powder
- 1 tablespoon of onion powder
- 1 tablespoon of salt
- 1 tablespoon of black pepper
- BBQ sauce
- Aluminum foil
Instructions:
- Preheat your grill to medium heat or 275°F in a smoker.
- In a small bowl, combine garlic, brown sugar, smoked paprika, powder, salt, onion powder, and black pepper. Mix well to make a dry rub.
- From the back of the ribs, remove the silver skin, then season both sides of the ribs generously with the dry rub. Be sure to coat the ribs well.
- Place the ribs on the grill or in the smoker and cook for 2-3 hours or until tender and start pulling away from the bone.
- After the first hour, wrap the ribs in aluminum foil to help keep them moist and continue cooking.
- Remove the foil, then brush the ribs with BBQ sauce. Cook for 20-30 minutes or until the sauce caramelizes and the ribs thoroughly cook.
- Remove ribs from the smoker or grill. Let ribs rest for at least 10 minutes before slicing.
- Serve with additional BBQ sauce and your favorite sides, such as coleslaw or mac and cheese.
