  1. Preheat oven to 375°F (190°C).
  2. Roll out puff pastry dough one sheet on a floured surface to about 1/8 inch thickness.
  3. Cut the dough into 8 equal-sized squares.
  4. Mix the chopped spinach, feta cheese, Parmesan cheese, salt, and pepper in a bowl.
  5. Place 1 tablespoon of the spinach and cheese mixture on one corner of each puff pastry square.
  6. Fold the corner with the filling over the opposite corner, forming a triangle shape.
  7. Press the edges of the pastry together with a fork to seal.
  8. Repeat steps 2-7 with the remaining puff pastry dough and filling sheet.
  9. Brush the tops of the pastry triangles with the beaten egg.
  10. Place the pastry triangles on a baking sheet lined with parchment paper.
  11. Bake until pastry is golden until puffed or for 20-25 minutes.
  12. Serve warm as an appetizer or snack.
