Ingredients:
- 1 package puff pastry dough (2 sheets)
 - 1 cup fresh spinach, chopped
 - 1/2 cup crumbled feta cheese
 - 1/4 cup grated Parmesan cheese
 - 1 egg, beaten
 - Salt and pepper to taste
 
Instructions:
- Preheat oven to 375°F (190°C).
 - Roll out puff pastry dough one sheet on a floured surface to about 1/8 inch thickness.
 - Cut the dough into 8 equal-sized squares.
 - Mix the chopped spinach, feta cheese, Parmesan cheese, salt, and pepper in a bowl.
 - Place 1 tablespoon of the spinach and cheese mixture on one corner of each puff pastry square.
 - Fold the corner with the filling over the opposite corner, forming a triangle shape.
 - Press the edges of the pastry together with a fork to seal.
 - Repeat steps 2-7 with the remaining puff pastry dough and filling sheet.
 - Brush the tops of the pastry triangles with the beaten egg.
 - Place the pastry triangles on a baking sheet lined with parchment paper.
 - Bake until pastry is golden until puffed or for 20-25 minutes.
 - Serve warm as an appetizer or snack.
 
Variations:
- Puff pastry rolls with bacon and cheddar cheese: Replace the spinach and feta cheese mixture with cooked and crumbled bacon and shredded cheddar cheese.
 - Puff pastry rolls with ham and Swiss cheese: Replace the spinach and feta cheese mixture with sliced ham and shredded Swiss cheese.
 - Puff pastry rolls with Nutella and bananas: Cut the puff pastry into strips and spread Nutella and sliced bananas on each strip. Roll up and bake as directed Bon appetit!
