Oatmeal Pancakes by Ivrydbook

Ingredients: 

-1 cup all-purpose flour 

-1 cup quick-cooking oats 

-2 teaspoons baking powder 

-1 teaspoon baking soda 

-1/2 teaspoon salt 

-2 tablespoons sugar 

-1 egg -1 cup buttermilk 

-2 tablespoons butter, melted  

Instructions: 

1. Whisk together the flour, oats, baking powder, salt, baking soda, and sugar in a large bowl. 

2. Whisk together the egg, buttermilk, and melted butter in a separate bowl. 

3. Make a well in the center of the ingredients(dry) and pour in the wet ingredients. 

4. Gently mix until just combined. Refrain from mixing. 5. Heat a lightly oiled griddle or frying pan over medium-high heat. 

6. Drop the batter using a large spoonful on the griddle and cook until bubbles form and the edges are golden brown. 

7. Flip with a spatula and cook until golden brown on the other side. 

Fruit Topping: Sliced Bananas, Chopped Walnuts, Raisins
