Coconut Pancakes by Ivrydbook

Ingredients: 

-1 1/2 cups all-purpose flour 

-3 1/2 teaspoons baking powder 

-1 teaspoon salt 

-1 tablespoon sugar 

-1 1/4 cups milk 

-1 egg 

-3 tablespoons butter, melted 

-1/2 cup sweetened shredded coconut  

Instructions: 

1. Whisk the flour, baking powder, salt, and sugar in a large bowl. 

2. Whisk the milk, egg, and melted butter separately. 

3. Make a well in the center of the ingredients(dry) and pour in the wet ingredients. 

4. Gently mix until just combined. Do not over mix. 5. Stir in the shredded coconut. 

6. Heat a lightly oiled griddle or frying pan over medium-high heat. 

7. Drop the batter using a large spoonful on the griddle and cook until bubbles form and the edges are golden brown. 

8. Flip with a spatula and cook until golden brown on the other side.  

Fruit Topping: 

Sliced Bananas, Chopped Macadamia Nuts, Toasted Coconut Flakes
