Ingredients:
- 1 pound sirloin steak
- Salt and pepper
- 2 tablespoons olive oil
- 1 large onion, sliced
- 2 bell peppers, sliced
- 1 zucchini, sliced
- 1 cup cherry tomatoes
- 4 cloves garlic, minced
- 2 tablespoons chopped fresh parsley
- 1 tablespoon chopped fresh thyme
- 1 tablespoon chopped fresh rosemary
- 4 large potatoes, peeled and diced
- 1/2 cup milk
- 4 tablespoons butter
- Salt and pepper
Instructions:
- Preheat oven to 400°F (200°C).
- Season steak with pepper and salt on both sides.
- Heat olive oil one tablespoon in a large skillet over high heat. Add steak and cook for 4-5 minutes on each side until cooked or browned to your liking. Transfer the steak to a sizzling platter.
- Add another tablespoon of olive oil in the same skillet, and add the sliced onions, bell peppers, and zucchini. Cook for 5-7 minutes until they are slightly softened.
- Add the cherry tomatoes, garlic, parsley, rosemary, and thyme, to the skillet and cook for another 3-5 minutes until the tomatoes are slightly softened.
- Spread the roasted vegetables around the steak on the sizzling platter.
- Boil diced potatoes until tender in salted water in a separate pot, then drain.
- Mash the potatoes with milk, butter, salt, and pepper to taste.
- Serve the sizzling steak with the roasted vegetables and mashed potatoes on the side.
