Instructions:

- Add the minced garlic and white chopped onion, and stir-fry for 1-2 minutes, until fragrant.
- Add the diced carrot and frozen peas, and stir-fry for 4 -5mins until the vegetables are tender.
- Gather the vegetables to the side of the skillet or wok and pour the beaten eggs into the empty space.
- Scramble the eggs until cooked through, then mix them with the vegetables.
- Add the cooked rice to the skillet or wok, and stir-fry everything together for 2-3 minutes until the rice is heated.
- Add 2 tablespoons of soy sauce and salt and pepper to taste. Stir-fry for another minute or so.
- For the salad, combine the mixed greens, sliced cucumber, diced tomato, thinly sliced red onion, and chopped cilantro in a large bowl.
- Whisk together 2 tablespoons of olive oil, 1 tablespoon of lemon juice, and salt and pepper to taste in a small bowl.
- Drizzle the cream or dressing over the salad, and toss to coat.
- Serve the fried rice and salad together for a delicious and balanced meal.
