Smoky and Succulent BBQ Ribs

Ingredients:

  • 2 racks of pork ribs (St. Louis style or baby back ribs)
  • 2 tablespoons of brown sugar
  • 1 tablespoon of smoked paprika
  • 1 tablespoon of garlic powder
  • 1 tablespoon of onion powder
  • 1 tablespoon of salt
  • 1 tablespoon of black pepper
  • BBQ sauce
  • Aluminum foil

Instructions:

  1. Preheat your grill to medium heat or 275°F in a smoker.
  2. In a small bowl, combine garlic, brown sugar, smoked paprika, powder, salt, onion powder, and black pepper. Mix well to make a dry rub.
  3. From the back of the ribs, remove the silver skin, then season both sides of the ribs generously with the dry rub. Be sure to coat the ribs well.
  4. Place the ribs on the grill or in the smoker and cook for 2-3 hours or until tender and start pulling away from the bone.
  5. After the first hour, wrap the ribs in aluminum foil to help keep them moist and continue cooking.
  6. Remove the foil, then brush the ribs with BBQ sauce. Cook for 20-30 minutes or until the sauce caramelizes and the ribs thoroughly cook.
  7. Remove ribs from the smoker or grill. Let ribs rest for at least 10 minutes before slicing.
  8. Serve with additional BBQ sauce and your favorite sides, such as coleslaw or mac and cheese.
