Grilled Beef with Garlic and Herbs

Ingredients:

• 1 lb beef (sirloin or flank steak work well)
• 2 cloves garlic, minced
• 1 tablespoon fresh thyme, chopped
• 1 tablespoon fresh rosemary, chopped
• Salt and black pepper, to taste
• 1 tablespoon olive oil

Instructions:

1. Preheat your grill to medium-high heat.
2. Season beef with pepper and salt on both sides.
3. Mix minced garlic, chopped thyme, chopped rosemary, and olive oil in a small bowl.
4. Rub the garlic and herb mixture onto both sides of the beef.
5. Place beef on the grill and cook for 5-6 minutes per side for medium-rare or until the desired doneness.
6. Remove the beef from the grill and let it rest for 5-10 minutes before slicing.
7. Serve the grilled beef with your favorite roasted vegetables and mashed potatoes.

Other serving suggestions:

• Top the grilled beef with a pat of butter for an extra burst of flavor. Mix softened butter with chopped fresh herbs and minced garlic, roll it into a log, and chill until firm. Slice off a pat and place it on top of the hot beef.
• Serve the grilled beef with a tangy chimichurri sauce made with parsley, garlic, red wine vinegar, and olive oil. Blend all the ingredients together until smooth in a food processor.
