Fried rice with salad by the side

Ingredients:

For Fried Rice:

  • 2 cups cooked rice
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 carrot, diced
  • 1/2 cup frozen peas
  • 2 eggs, beaten
  • 2 tablespoons soy sauce
  • Salt and pepper, to taste

For Salad:

  • 4 cups mixed greens
  • 1 cucumber, sliced
  • 1 tomato, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup chopped cilantro
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste

Instructions:

  1. Heat minor or two tablespoons of vegetable oil or wok over high heat in a large skillet.
  2. Add the minced garlic and white chopped onion, and stir-fry for 1-2 minutes, until fragrant.
  3. Add the diced carrot and frozen peas, and stir-fry for 4 -5mins until the vegetables are tender.
  4. Gather the vegetables to the side of the skillet or wok and pour the beaten eggs into the empty space.
  5. Scramble the eggs until cooked through, then mix them with the vegetables.
  6. Add the cooked rice to the skillet or wok, and stir-fry everything together for 2-3 minutes until the rice is heated.
  7. Add 2 tablespoons of soy sauce and salt and pepper to taste. Stir-fry for another minute or so.
  8. For the salad, combine the mixed greens, sliced cucumber, diced tomato, thinly sliced red onion, and chopped cilantro in a large bowl.
  9. Whisk together 2 tablespoons of olive oil, 1 tablespoon of lemon juice, and salt and pepper to taste in a small bowl.
  10. Drizzle the cream or dressing over the salad, and toss to coat.
  11. Serve the fried rice and salad together for a delicious and balanced meal.

Other styles and ingredients:

  • Add chopped chili peppers or sriracha sauce to the fried rice for a spicy kick.
  • To make a vegetarian version, omit the eggs and add some tofu or extra veggies like bell peppers or mushrooms.
  • You can add protein to the fried rice, such as diced chicken or shrimp.
  • Serve with additional sauces like sweet chili sauce or hoisin sauce for dipping.
  • Add some roasted peanuts or cashews on top for extra crunch.
